You can see from the picture that there isn’t a lot of fat tucked inside the roast. I can’t tell you how many lamb roasts I’ve purchased that I’ve spent a fortune on, roasted to perfection and then sliced into the roast finding huge pockets of fat. Gross. Grass-fed is typically lower in fat than grain-fed meat. There was just enough fat on top of the roast to result in a tender, roasted meat. We served this at a dinner party when I was testing out recipes for Easter, and it was a big hit.

Dijon Crusted Lamb Roast with Mint Sauce

The lamb was incredibly moist and juicy… The dijon crust and the minty sauce really complimented the naturalness of this lamb. It left us wanting more and lucky for us we had left-overs!…I am more than impressed with the quality of their lamb – it is all 100% grass-fed, never placed in feed lots, never given hormones or antibiotics. It is definitely the best lamb we have eaten.

I remembered I had a couple lamb shanks in the freezer from Lava Lake Lamb, and decided to make those. It’s not every day we eat lamb (sadly) and shanks are so good when braised, which, thankfully for me, is incredibly easy to do. These were delicious, flavorful, and indulgent.
